Baked Penne and Cheese

Ingredients
Uncooked Penne - 1 1/2 cup
Butter - 2 tbsp
All purpose flour - 2 tbsp
Milk- 2 cups
Shredded cheddar cheese- 1 1/2 cup
Ground black pepper - 1 tsp
Chilli flakes -1/2 tsp
Dried Parsley - 1/2 tsp
Salt -1/2 tsp
Directions
1. Cook pasta according to the package direction,Keep warm
2. Melt butter in a big non stick pan over low heat,add all purpose flour and whisk until smooth. Cook for two minutes by constantly whisking.
3. Stir in milk,whisk constantly and cook for 5 minutes or until thickened
4. Remove from heat,add pepper powder,chilly flakes,salt,parsley,half of shredded cheese and cooked pasta.Mix well.
5. Preheat oven to 400 F. Grease the baking pan,spoon the pasta mix to it. Spread the remaining shredded cheese on top of it.
6. Bake it for 20 minutes,or until bubbly.
Serve it after 10-15 minutes.

Cheddar Bay Biscuit : Red Lobster style

Ingredients
Bisquick biscuit mix - 2 cups*
Cheddar cheese(shredded)- 1/2 cup 
Milk - 2/3 cup
Butter - 1/4 cup ,melted
Garlic powder- 1/4 tsp
Dried parsley - 1/4 tsp

Directions
1. Preheat oven to 450 F
2. Mix biscuit mix,milk and cheddar cheese to a soft dough. Beat vigorously for 30 seconds.
3. Drop the dough using spoon to an ungreased cookie sheet.
4. Bake for 8-10 minutes or until golden brown,depending on your oven
5. Meanwhile mix melted butter,garlic powder,and dried parsley.
6. Brush it on the warm biscuits,before removing from the cookie sheet. Serve warm.Yields 12-14 biscuits

Shrimp Vindaloo

Ingredients
Large Shrimp - 1 cup deveined,cleaned
Onion- 1 cup thinly sliced
Ginger - 1 tsp minced
Garlic - 1 tsp minced
Green chillies- 2 split (optional)
Coriander powder - 2 tsp
Chilly powder - 1 tsp
Turmeric  powder - 1/4 tsp
Black Pepper powder - 1/2 tsp
Cumin powder- 1/4 tsp
Clove & cinnamon stick - 1-2(or 1/8 tsp of its powder)
White vinegar - 1.5 tbsp
Tomato - 1/2 cup chopped
Coconut milk - 1/4 cup
Cooking Oil
Mustard seeds
Salt 
Water
Directions
1. Heat oil in a pan,splutter mustard seeds,add onion.Saute well until onion starts browning,now add ginger,green chillies and garlic and saute for 1-2 minutes.(I added curry leaves too,though original recipe doesnt follow that)
2. Add all the powders/whole spices vinegar,tomatoes,coconut milk ,and 1/2 cup of water and bring to boil.Simmer and allow the gravy to thicken (moderate thickness)
3. Add salt and cleaned shrimp and cook for another 3-4 minutes or until the shrimp is cooked.
4. Remove from heat and serve hot with white rice,appam, chappathi,etc..
Note : I gave a Kerala touch to this,by spluttering mustard seeds,and curry leaves.Original recipe says adding crushed mustard seeds along with powders and no curry leaves.
